Soay Meat

Soay meat has a taste similar to elk or Dahl sheep rather than domestic sheep. It is naturally low in fat and has very tender cuts as well as those that do best as stew.

The sheep we sell for meat are treated as well as those we sell as breeding stock or those we keep. We love all our Soay and by selling the surplus rams it allows us to participate more fully in the preservation project.

We breed our Soay primarily for other breeders, folks that would like to have their own flocks for family meat production, estate sheep or wool, and to support the preservation project. In every lambing season there are normally more rams born than can be placed at breeding farms.

These rams, though healthy, perfectly beautiful animals - as pictured on this page - are sold for meat. Wind River makes these sheep available to gourmet restaurants to offer as seasonal specials, and to individuals.

Our sheep are raised on forest forage and grass hay. Though we are not certified organic our property has been in a family trust - untouched for over twenty years - and when we plant areas after the Soay have cleared the brush we do not chemically treat for enhanced growth. Our Soay do not receive hormones or routine antibiotics. They are robust and healthy without pharmaceutical intervention.

We also have meat sheep available that have not had ear tags or been castrated - no alteration to their bodies.
