Recipes From the cookbook: Cooking For A Good Life

Nacho Tacos

2 packs taco spice mix
16 ounces sour cream
1 large can refried beans (20 oz.)
2 tablespoons salsa - hot or medium to your taste
1 pound ground meat
2 cups shredded Mexican blend cheese
1 can black olives - sliced
1 medium sweet onion - sliced
2 firm tomatoes - sliced
Scooping Nacho Chips

Mix sour cream with 1 pack of the taco spice mix, refrigerate while preparing the rest.

Mix the refried beans with the salsa and spread in the bottom of a 9 x 9 baking dish.

Brown the ground meat - drain off all grease. Mix meat with 1 pack of taco spice according to package directions. Allow to cool down a bit - 10 to 15 minutes.

Spread meat on top of beans.

Spread taco spiced sour cream on top of meat.

Spread shredded cheese over sour cream.

Top with layers of black olives, sweet onion and tomato.

Serve with nacho chips.

My sister gave me this recipe - as one of her family favorites for Christmas Eve.
Her children and grandchildren have come to count on it as a family tradition.
