Too Easy To Believe Cheesecake

1/2 cup graham cracker crumbs
1/4 cup sugar
2 tablespoons melted butter
1 1/2 cups softened cream cheese
2 eggs, beaten
1/3 cup sugar
1 teaspoon vanilla
3/4 cup sour cream
2 tablespoons sugar
1/2 teaspoon vanilla

Preheat oven to 350 degrees.

Combine crumbs, sugar and melted butter. Place 1 cup of the crumb mix into pretty baking dish and press to side and bottom.

Place cream cheese in mixing bowl and beat at medium speed until light and fluffy. Add eggs slowly while beating. Add sugar and vanilla, beat at high speed for 5 minutes.

Place in graham cracker shell. Bake 20 - 30 minutes.

Mix sour cream, 2 tablespoons sugar and 1/2 teaspoon vanilla.

Remove cheese cake from oven, spread sour cream mix over top, return to oven bake an additional 10 minutes.

Refrigerate until cold. Serve plain or with your choice of topping.
